Arachuvetta Sambar Recipe – Sambar with fresh spices


  • To start making Arachuvetta Sambar recipe, cook toor dal in a pressure cooker, add 2 cups of water until you hear a few whistles. After a few whistles, reduce the heat to low and cook for 3 to 4 minutes. Once done, turn off the heat and allow the pressure to release naturally.

  • Once the pressure is released, open the cooker and stir the dal until smooth. Set this aside.

  • Prepare tamarind water Follow the recipe and set it aside. Cut the vegetables and set aside.

  • Next we are going to roast the spices for Alachuvita Sambar recipe.

  • In a small frying pan, add Bengal gram dal and urad dal; roast over medium heat until the dal is toasted and brown. It's important to bake over low to medium heat so it doesn't brown too quickly.

  • Once roasted, add coriander seeds, methi seeds and red chillies and roast for about a minute until fragrant.

  • Finally, add grated coconut and toast until fragrant and then turn off the heat.

  • Let the roasted sambar spice mixture cool down slightly. After cooling, grind the mixture into a powder in a mixer grinder. Set this aside.

  • The next step is to cook the vegetables. Add the prepared tamarind water, diced carrots, radish, chicken drumsticks, onions, turmeric powder, salt and ground sambar powder in a pressure cooker. Cook the pressure cooker for a few whistles and then turn off the heat.

  • After the pressure is released, add the cooked dal to the tamarind water. Mix well.

  • Check the salt and adjust to your taste. Bring the Arachuvetta Sambar to a rapid boil for a few minutes. Add water to adjust the consistency of the sambar and cook for a few more minutes.

  • Once done, turn off the heat, stir in the chopped coriander leaves and transfer the Arachuvetta Sambar to a bowl.

  • The last step is the tadpoles of the sambar.in a small Tadkar Pan, add sesame oil and heat slightly. Once the oil is hot, add mustard seeds, curry leaves and let them crackle. Finally add the asafoetida powder to the oil and stir. Turn off the heat.

  • Add these tadpoles to the Arachuvetta Sambar, stir and serve hot.

  • Serve Arachuvetta Sambar with rice and top with ghee and vegetables e.g. andhra style Pavakai Curry, Avarakai Poriyar or Marsala Roasted Baby Potatoes Have lunch or dinner.You can also mix it with rice to make a one pot meal – like Sambar Sadam (rice) and serve it with rice Tomato Onion Cucumber Raita.
